Dan Dan Noodles

About the Recipe

Bold and savory, these Dan Dan Noodles are packed with flavor. Tender noodles are tossed with seasoned turkey, crisp vegetables, and a rich sesame and chili garlic sauce that brings the perfect balance of heat and umami. A comforting, slurpable dish with a kick in every bite.

Ingredients

For the Lo Mein Noodles:

  • 1 ¼ cups of frozen yakisoba noodles


For the Dan Dan Noodles:

  • 2 Tbsp. seasoned rice vinegar 

  • 2 Tbsp. soy sauce

  • ½ Tbsp. cornstarch

  • 1 ¾ cups ground turkey

  • ⅓ cup water

  • 2 ½ Tbsp. tahini paste

  • 2 Tbsp. Korean hot sauce

  • ½ tsp. seasoned rice vinegar

  • ½ tsp. soy sauce

  • ½ tsp. chicken stock base

  • 2 tsp. vegetable oil

  • 2 ½ Tbsp. snow peas, trimmed

  • 2 Tbsp. carrot, trimmed and sliced diagonally ⅛”

  • 1 ½ Tbsp. green bell pepper, trimmed and sliced diagonally ⅛”

  • Cooked Lo Mein Noodles

  • 1 Tbsp. green onion, trimmed and cut into 1 ½” pieces

Preparation

For the Lo Mein Noodles


Step 1

Bring a medium pot of water to a boil.


Step 2

Boil your noodles for 3 minutes or follow your package instructions.


Step 3

Drain and rinse your noodles with cold water.


Step 4

Cover and keep for later in the recipe.



For the Dan Dan Noodles


Step 1

Combine the first amount of vinegar, the first amount of soy sauce, and cornstarch in a medium bowl. Whisk together until well blended. Add in the turkey and mix well. Set aside.


Step 2

In a small bowl, combine water, tahini paste, garlic, Korean hot sauce, the second amount of vinegar, the second amount of soy sauce, and chicken stock base. Whisk together until well blended and set aside. This will be your sauce.


Step 3

In a sauté pan or wok over high heat, heat oil. Add in the turkey mixture. Stir-fry until well browned and cooked through, around 10 minutes.


Step 4

Add in the snow peas, carrot, and green pepper. Stir-fry for another 2 minutes.


Step 5

Add in your sauce and mix well. Bring the pan to a boil. Reduce the heat and let simmer until the sauce thickens, about 3 - 5 minutes.


Step 6

Add in the noodles and toss to mix. Continue cooking until the noodles are fully coated and heated through.


Step 7

To plate, place one cup of your Dan Dan Noodles and top with 1 Tbsp. of green onions. Now you're ready to enjoy!
