Ingredients
For the Kielbasa & Potato Hash
1 Tbs. + 2 ¼ tsp. vegetable oil
1¼ cups Kielbasa, halved lengthwise and sliced into ¾ inch pieces
1 ¼ cups yellow onion, thinly sliced
1 ⅓ cups green pepper, quartered and thinly sliced
¾ tsp. minced garlic
1 ¾ cups roasted red potatoes
For the Roasted Red Potatoes
2 ½ cups small red potatoes, quartered lengthwise
1 tsp. vegetable oil
Preparation
For the Roasted Red Potatoes
Step 1
Preheat convection oven to 350°F.
Step 2
Combine all ingredients. Toss to coat.
Step 3
On a sheet pan, place potatoes in a single layer.
Step 4
Bake, turning once, until golden brown and fork-tender, about 16-22 minutes.
Step 5
Cover and keep warm to save for later.
For the Kielbasa & Potato Hash
Step 1
Preheat flat-top griddle to 350°F.
Step 2
Spread oil on the griddle. Add the sausage and sauté until browned on all sides, about 3-4 minutes.
Step 3
Add in the onion, green pepper, and garlic. Sauté until the onion is translucent, about 3-5 minutes.
Step 4
Add in the potatoes and toss to mix. Cook for an additional 1-2 minutes.
