Hearty, smoky, and oh-so-satisfying. This classic hash brings together grilled Polish sausage, roasted red potatoes, and a colorful mix of sautéed onions, peppers, and garlic. Every bite delivers the perfect blend of savory flavor and comfort, making it a delicious anytime meal that hits the spot from breakfast to dinner.

Ingredients

For the Kielbasa & Potato Hash

  • 1 Tbs. + 2 ¼ tsp. vegetable oil

  • 1¼ cups Kielbasa, halved lengthwise and sliced into ¾ inch pieces 

  • 1 ¼ cups yellow onion, thinly sliced

  • 1 ⅓ cups green pepper, quartered and thinly sliced

  • ¾ tsp. minced garlic

  • 1 ¾ cups roasted red potatoes 


For the Roasted Red Potatoes

  • 2 ½ cups small red potatoes, quartered lengthwise

  • 1 tsp. vegetable oil

Preparation

For the Roasted Red Potatoes


Step 1

Preheat convection oven to 350°F.


Step 2

Combine all ingredients. Toss to coat. 


Step 3

On a sheet pan, place potatoes in a single layer. 


Step 4

Bake, turning once, until golden brown and fork-tender, about 16-22 minutes. 


Step 5

Cover and keep warm to save for later.



For the Kielbasa & Potato Hash


Step 1

Preheat flat-top griddle to 350°F.


Step 2

Spread oil on the griddle. Add the sausage and sauté until browned on all sides, about 3-4 minutes. 


Step 3

Add in the onion, green pepper, and garlic. Sauté until the onion is translucent, about 3-5 minutes. 


Step 4

Add in the potatoes and toss to mix. Cook for an additional 1-2 minutes.


Step 5

Now you're ready to serve up your delicious Kielbasa & Potato Hash!
