Ingredients
For the Lemon Garlic Broth
2 cups water
1 Tbs. roasted garlic puree
2 tsp. lemon juice
1 tsp. lemon zest
2 tsp. vegetable broth base
2 tsp. cornstarch
For the Linguine:
1 Tbs. vegetable oil
12 oz. shrimp, raw, cleaned
6 oz. yellow onion, diced
6 oz. scallion, thinly sliced
2 Tbs. garlic, minced
16 oz. lemon garlic broth
1/4 tsp. kosher salt
1/4 tsp. crushed red pepper flakes
1/2 tsp. ground black pepper
12 oz. linguine
2 Tbs. parsley, chopped
0.5 oz shredded parm for garnish
Preparation
For the Lemon Garlic Broth
Step 1
In a pot over high heat, bring water, garlic puree, lemon juice, vegetable stock base, and lemon zest to a boil. Whisk until base and flavor concentrate are dissolved.
Step 2
In a separate bowl, combine cornstarch with about an equal amount of water. Whisk until well combined. Whisk into boiling mixture.
Step 3
Cook, whisking constantly, until mixture thickens and boils. Reduce heat. Simmer 5 minutes.
Step 4
Cover. Keep hot for use as directed in recipe.
For the Linguine
Step 1
Bring a pot of salted water to a boil. Cook your linguine and set aside.
Step 2
In a sauté pan over medium-high heat, heat oil.
Step 3
Add your shrimp, onion, scallion, and garlic. Sauté for 2 minutes.
Step 4
Add your broth along with your salt, black pepper, and crushed red pepper flakes. Bring to a simmer for 1 to 2 minutes.
Step 5
Add your cooked linguine and parsley. Toss to mix. Cook until heated through and shrimp are opaque in the center, about 2 to 3 minutes.
Step 6
Plate and use shredded parm as garnish. Serve immediately.
