About the Recipe
Spinach & Lentil Fritters are a wholesome, flavor-packed bite made with brown lentils, fresh spinach, cilantro, jalapeños, and a hint of curry powder. Crispy on the outside and tender inside, they’re topped with a drizzle of sriracha dressing for a spicy, tangy finish that ties it all together.

Ingredients
For the Spinach & Lentil Fritters:
1 tsp vegetable oil
2 ½ cups baby spinach, chopped
2 tsp. fresh cilantro
½ tsp. fresh garlic cloves, minced
2 tsp. jalapeno peppers, seeded and minced
prepared Brown lentils
¾ cup panko breadcrumbs
¼ cup + 1 Tbsp. liquid Just Egg or other liquid egg replacement
1 ¼ tsp. spiced curry powder
¼ tsp. Kosher salt
2 pinches (or a little less than ⅛ tsp.) baking powder
Vegan Creamy Sriracha dressing
For the Prepared Lentils:
⅔ cup dried brown lentils, rinsed and drained
3 cups water
For the Vegan Creamy Sriracha Dressing:
½ cup vegan mayo
1 ½ tsp. Sriracha
¼ tsp. Lemon juice
Preparation
For the Lentils:
Step 1
Add water and lentils to a stockpot and place them over high heat, bringing it to a boil.
Step 2
Once boiling, cover and reduce heat to low. Allow to simmer for 20-25 minutes or until lentils are just tender.
Step 3
Drain the lentils and set aside to cool.
For the Vegan Creamy Sriracha Dressing:
Step 1
Combine ingredients and whisk until homogenous. Cover and chill until ready to serve.
For the Spinach & Lentil Fritters:
Step 1
Heat oil in a sauté pan. Once heated, add the spinach, garlic, and jalapenos. Sauté for 2-3 minutes until spinach is wilted. Then take off the heat and set aside to cool.
Step 2
Put that same pan back on the stove and heat to 350 F.
Step 3
In a bowl, combine lentils, spinach/garlic/jalapeno mixture, Just Egg, cilantro, panko, curry powder, salt and baking powder. Mix well to combine.
Step 4
Coat griddle or pan in cooking spray (or an alternative to prevent sticking).
Step 5
Once the cooking surface is hot, scoop the lentil mixture onto the pan. Scoops should be between 2 Tbsp. and ¼ cup in volume, making 6-8 fritters.
Step 6
Cook for 2-4 minutes on each side, or until golden brown.
Step 7
Plate your fritters and top with a dollop of Vegan Creamy Sriracha mayo. Now enjoy!
