Indulge in this hearty and delicious Vegan Frito Pie – a perfect blend of crispy corn chips topped with savory plant-based chili con carne, zesty salsa, and tangy banana peppers. Ingredients
For the Vegan Chili con Carne:
1/2 tsp. vegetable oil
1/2 cup yellow onion, diced
3 Tbs. green bell pepper, diced
1/4 tsp. garlic, minced
3 Tbs. + 1 tsp. all-purpose flour
1 Tbs. chili powder
1 tsp. cumin
1/4 tsp. kosher salt
1/8 tsp. granulated sugar
2 Tbs. tomato paste
1 tsp. vegetable stock base (roughly 1 bouillon cube)
1 1/2 cups water
1 cup crushed tomato
1/2 tsp. tabasco
2 cups plant-based ground 'meat' (meatless crumbles)
3/4 cup cooked kidney beans, if canned strain and rinse
For the pie:
8 snack sized Fritos bags or 1 large Fritos bag
1 qt. vegan chili con carne (above)
2 cups of your favorite vegan salsa
2/3 cup sliced banana peppers
Preparation
For the Vegan Chili con Carne:
Step 1
In stockpot over medium-high heat, heat oil. Add onion, pepper and garlic. Sauté until onion is translucent, 3 to 5 minutes.
Step 2
Reduce heat to medium. Add flour, chili powder, cumin, salt and sugar. Whisk until well blended. Cook, whisking often, 3 to 5 minutes. Stir in tomato paste and base. Cook 2 to 3 minutes.
Step 3
Add water, tomato and hot sauce. Mix well. Cook, whisking constantly, until mixture thickens and boils.
Step 4
Add vegetarian beef and beans. Return to a boil. Reduce heat. Simmer 35 minutes.
Step 5
Once simmered, turn off heat and set aside for your pie.
For the Vegan Frito Pie:
Step 1
To assemble, start with 1 snack bag of Fritos as your base. If using a large bag of Fritos, start with one recommended serving size.
Step 2
Top the Fritos with the vegan chili con carne, a touch of salsa, and a banana pepper slice.
Step 3
Serve and enjoy!
