Za'atar Spiced Cauliflower Taco

About the Recipe

A vibrant twist on taco night! Roasted cauliflower seasoned with fragrant za’atar is tucked into a soft flour tortilla, then topped with zesty schug sauce, pickled red cabbage, fresh cilantro and onion, and a drizzle of vegan sriracha mayo. Bold, colorful, and full of Middle Eastern-inspired flavor in every bite.

Ingredients

For the Za’atar Spiced Cauliflower Taco

  • 6 white flour tortillas, 6”

  • 1 ½ cup za’atar spiced roasted cauliflower

  • ¼ cup & 2 Tbs. schug sauce 

  • ¾ cup & 3 Tbs. pickled red cabbage

  • ⅓ cup cilantro and onions

  • ¼ cup & 2 Tbs. vegan sriracha mayo


For the Za’atar Spiced and Roasted Cauliflower

  • 3 cups cauliflower florets 

  • 1 Tbs. vegetable oil

  • 1 Tbs. za’atar


For the Schug Sauce

  • 2 Tbs. & ¾ tsp. vegetable oil

  • 1 ½ Tbs. sliced jalapeno

  • 2 ¼ tsp. lemon juice

  • 2 ½ Tbs. curly parsley

  • 2 ½ Tbs. cilantro 

  • ¾ Tbs. peeled garlic cloves or 2-3 small to medium sized cloves

  • ¾ tsp. ground cardamom

  • ½ tsp. ground coriander

  • ¼ tsp. kosher salt


For the Pickled Red Cabbage

  • 1 cup red wine vinegar

  • 1 ½ tsp. granulated sugar

  • 1 ½ tsp. kosher salt

  • 1 ¼ cups shredded red cabbage


For the Cilantro and Onions

  • ¼ cup yellow onion, trimmed and diced

  • 3 ¾ tsp. chopped cilantro 


For the Vegan Sriracha Mayo

  • 5 ½ Tbs. vegan mayo

  • 2 ¼ tsp. sriracha chili sauce 

Preparation

For the Za’atar Spiced and Roasted Cauliflower


Step 1

Preheat convection oven to 400 F.


Step 2

Combine all ingredients and toss to coat. 


Step 3

On parchment lined sheet pan(s), spread cauliflower mixture in single layer.


Step 4

Bake until browned, about 12-14 minutes. 


Step 5

Cover and keep hot until further directed in the recipe.



For the Schug Sauce


Step 1

In a blender, combine all ingredients. Blend until smooth.


Step 2

Cover and keep chilled until you're ready to assemble. Whisk before using incase of natural separation.

 


For the Pickled Red Cabbage


Step 1

In stockpot over medium-high heat, place vinegar, sugar, and salt. Bring to a boil.


Step 2

Once the sugar and salt have dissolved, pour the liquid over your cabbage. Mix well and let stand for 30-40 minutes. 


Step 3

Cover and keep chilled until you're ready to assemble.



For the Cilantro and Onions


Step 1

Combine cilantro and onions, toss to coat.


Step 2

Cover and keep chilled until service or use as directed in recipe. 



For the Za’atar Spiced Cauliflower Taco


Step 1

Layer the following across the center of 1 tortilla:

  • ¼ cup Za'atar Cauliflower

  • 1 Tbs. schug 

  • 2 Tbs. pickled red cabbage

  • 1 Tbs. cilantro onion

  • 1 Tbs. vegan sriracha mayo


Step 2

Serve immediately and enjoy!
